First of all, they are really easy to make and don’t require any special kitchen tools. My little trick for a smooth muffin batter without lumps is to incorporate the dry ingredients (flour, baking powder, salt) and the milk alternately. Add a bit of flour, mix. Pour in a little milk, mix again, and repeat. This is especially handy if you don’t have a stand mixer or electric whisk. You can actually use this trick for all your cake recipes…
These Starbucks-style vanilla chocolate muffins have a wonderful mix of textures. The crumble topping adds crunch, the muffin base is ultra-soft, and the chocolate chips melt beautifully… The perfect combination, right?
You can also customize this recipe with other ingredients like pralines, caramel cubes, or gianduja. A truly versatile recipe! 😉
As you can imagine, these Starbucks-style vanilla chocolate muffins are always a hit with my expert taste testers! And of course, I always sneak one or two for a little quality control.
The essential kitchen tools:
A large mixing bowl,
A good whisk,
A spatula,
A piping bag for filling (or a small ladle),
Muffin paper liners,
And muffin trays or individual paper molds.

Vanilla and Chocolate Chip Cookies like at Starbucks
Ingredients
- Crumble
- 45 g flour
- 15 g sugar
- 15 g brown sugar
- 30 g cold butter
- Muffin dough
- 100 g butter at room temperature
- 180 g sugar
- 1/2 vanilla pod
- 2 eggs
- 350 g flour
- 2 g salt or 1/2 teaspoon
- 14 g baking powder
- 250 g milk
- 100 g chocolate chips
Instructions
Crumble
Mix the 45 g of flour with 15 g of sugar and brwon sugar.
Add the cold butter and mix with your fingers.
When you get the crumble texture, set aside in your fridge.
Muffin dough
Preheat your oven at 180 C / 355 F degrees.
Whisk the butter at room temperature, the sugar and vanilla seeds.
Add one egg. When you get an homogeneous mixture, add the second egg.
In a seperate bowl, mix the flour, salt and baking powder.
Add 1/4 of the flour/salt/bakingpowder to your mixture. Mix.
Add 1/3 of the milk and whisk.
Start again with 1/4 of the powders, 1/3 milk, 1/4 of the powders, 1/3 milk and finally the rest of the powders. At each step, make sure to have an homogeneous mixture.
Add the chocolate chips and mix with a spatula.
Pour and fill to 3/4 of your molds (buttered if necessary).
Spread the crumble.
Bake 25 minutes.
Wait 15 minutes before unmolding and let cool down on a grid.
