Tahini Chocolate Chip Cookies

Here are the tahini and chocolate chip cookies.

It was after seeing a mouthwatering photo on the blog Browned Butter Blondie that I decided to make these tahini and chocolate chip cookies. I made my usual adjustments, both to offer you a slightly personalized recipe and to better suit our French tastes. Let me explain…

As is often the case with American or Anglo-Saxon recipes, the amount of sugar is quite impressive. So, while in my version of tahini and chocolate chip cookies, the sugar hasn’t completely disappeared (they’re still indulgent cookies!!), I’ve significantly reduced the amount of sugar and brown sugar. Also, even though I’m a big fan of tahini, I found that the original recipe had too strong a tahini flavor. So, I reduced that as well…

That being said, you might ask, “Why put tahini in cookies??” First of all, what is tahini? Tahini is a sesame paste, an oriental preparation made from ground sesame seeds with a bit of water until it forms a smooth paste. It is rich in calcium and phosphorus (which is already a great reason to use it) and gives these tahini and chocolate chip cookies a unique texture: crispy on the edges and super soft in the center. As they say in English, they are “chewy.”

If you don’t have tahini, you can replace it with almond butter, cashew butter, or peanut butter (be careful with the quantity—it’s quite rich!).

The necessary utensils:

A mixing bowl,
An electric whisk,
A spatula,
An ice cream scoop (to portion your dough),
And two baking sheets.

Tahini Chocolate Chip Cookies

Ingredients

  • 110 g butter at room temperature
  • 90 g tahini
  • 60 g caster sugar
  • 70 g brown sugar
  • 1 egg
  • 160 g flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 140 g dark chocolate chips

Instructions

Preheat your oven at 175 C / 350 F degrees.

Combine the butter and tahini until it whitens.

Add both sugars, combine then add the egg. Combine until homogeneous.

Add the powders (flour, baking powder, salt) and mix.

Add the dark chocolate chips and combine with a spatula.

With an ice cream spoon, make 14 balls and place them on 2 baking mats. Keep 2 inches space between each of them.

Bake 12-14 minutes until slightly golden on the edges.

Let cool down 5 minutes before placing on a cooling rack.
