Grandma’s apple pie

Like a madeleine de Proust, this dessert always has the same effect on me: an immediate return to childhood. The softness of the apple, the fluffiness of the cake, and the crunch of the caramelized butter—all come together for maximum pleasure!

So here is my Grandma’s Apple Cake!

It’s perfect for kids’ snack time, as an accompaniment to tea, or even as an indulgent breakfast. This is a recipe I got from my grandmother, and every time I bake this apple cake, I’m transported back to wonderful childhood memories!

Before I say more, here are a few other apple cake recipes I highly recommend!

My grandmother’s kitchen, her careful peeling of the apples, the strength in her mixing… Forget stand mixers, everything was done by hand, the old-fashioned way! Yes, I admit I take the easy route and use either a hand mixer or my kMix stand mixer, but honestly, doing it by hand with a good whisk and a mixing bowl works just as well!

You’ll see, Grandma’s apple cake is super indulgent and quite caloric! 😉 But that’s what makes it so irresistible! We start with a “basic” apple cake (you can even add a small diced apple to the batter for extra softness), and halfway through baking, we pour a mixture of butter, sugar, and egg over it, which caramelizes… And that… that makes all the difference!

Grandma's apple pie

Ingredients

  • 225 g flour
  • 90 g sugar
  • 5 tablespoons of milk
  • 4 tablespoons of oil
  • 2 eggs
  • 10 g baking powder
  • 2 apples
  • a pinch of salt
  • 80 g butter
  • 100 g sugar
  • 1 egg
  • vanilla powder

Instructions

Mix the flour with the sugar, baking powder and salt.

Add the milk, then the 2 eggs.

Pour gently the oil while mixing.

Put the mixture in a buttered mold.

Peel the apples, cut them in slices and put them on top of your mixture.

Put in the oven for 25 minutes at 180°C.

Melt slowly the butter.

When completely melted, add 100g sugar and vanilla powder. Finally add the egg.

After the 25 minutes, add the butter/sugar/vanilla/egg on top of your cake and put back in the oven for 15 minutes at 180°C.

Notes

My advice for an easy unmold. You may have got that this cake is amazing because of the caramelized butter on top. You may face some issue to unmold it ... To make this easier, put a lid on your mold when taking it out of the oven for a few minutes. The steam condensation will help !
