Here are my express pita breads!

I already have two pita bread recipes on the blog:
- sandwich pita breads, which give a puffy bread, ideal for filling by cutting it in half and stuffing it with delicious ingredients
- pita breads for gyros, which are used as a cone to be filled.
My express pita breads are a third option that offers incredible softness. The cherry on top, you can easily freeze them after baking and cooling them. Or simply store them in a freezer bag for several days. This way, they will stay nice and soft…
The really cool thing about this recipe: there is no rising time since we use baking powder instead of yeast…

You see, there are plenty of ideas, and I’m sure I’ve forgotten quite a few!!
Necessary utensils:
A mixing bowl,
A spatula,
A dough scraper (if you don’t have one, a good knife with a large blade will do the trick),
A rolling pin,
And a non-stick frying pan.

Express Pita flat Bread
Ingredients
- 250 g Greek yogurt
- 300 g flour
- 1 tbsp olive oil
- 1 tsp baking powder
- 1 tsp salt
- Fresh herbs (optional)
- Sunflower oil
Instructions
Pour the yogurt in a large bowl.
Add half of the flour and combine.
Add the remaining flour, baking powder, salt, the chopped herbs and the olive oil. Combine until homogeneous.
Transfer on your floured working plan.
Work the dough by hand adding flour is necessary. You should get a very soft dough.
Cut it in 8 pieces.
Shape each one in 15 cm diameter discs, add more flour if needed.
Heat your frying pan with sunflower oil.
Cook each pita bread on both sides.
