Veggie Wraps
Ingredients
- Peppers
- 1 red pepper
- 1 orange pepper
- 2 tbsp olive oil
- 2 stalks of fresh thyme
- Yogurt dip
- 300 g Greek yogurt
- 1/2 lemon juice
- 1 grated garlic clove
- 10 leaves chopped mint
- 1 chopped chive
- 1/4 tsp paprika
- 1/4 tsp ground cumin
- 1/4 tsp ground gingembre
- Salt
- Pepper
- Wrap
- 8 small tortillas
- Red onion pickles
- 10 mint leaves
- 100 g feta cheese
- 1/4 cucumber
- 100 g black Calamata olives
Instructions
Poivrons
Cut your peppers in thin slices.
Stir fry in a frying pan with olive oil.
Add salt and fresh thyme.
Cook at low heat for 15 to 20 minutes.
Set aside to cool down.
Yogurt dip
Combine all ingredients and set aside.
Wrap
Cut the cucumber in thin sticks. Dry with absorbing paper.
Remove the olive stones and cut the olives in stripes.
Spread a small tablespoon of yogurt dip on your tortillas.
Add the peppers, onion pickles, mint, a few feta cheese cubes, cucumber and olives.
Roll your wraps and serve with the remaining yogurt dip.
