We are now entering the summer season and that means adjusting our cooking habits. Less oven cooking, less stove use. Let’s have it raw!!!
That’s why I’m sharing today my raw stuffed tomatoes. Easy, simple and delicious!

Raw Stuffed Tomatoes
Ingredients
- Yogurt dip
- 200 g Greek yogurt
- 1/2 lime juice
- 1 grated garlic clove
- 10 chopped basil leaves
- 1/4 tsp paprika
- 1/4 tsp ground cumin
- 1/4 tsp ground gingembre
- Salt
- Pepper
- Tomatoes
- 10 small tomatoes
- 1/2 apple
- 10 cm cucumber
- 1/2 avocado
- 4-5 radishes
Instructions
Yogurt dip
Combine all ingredients and set aside.
Tomatoes
Cut the top of each tomato.
Remove the inside of the tomatoes.
Cut the cucumber, avocado and apple in very small cubes.
Add to the yogurt dip. Combine.
Fill in your tomatoes.
Place the top back on each tomato and add a few radish slices on the boarder.
Serve!
