Shall I say it? This week I cooked parsnip for the first time, ever…
I went grocery shopping at Grand Frais, a French supermarket specialized in local and fresh fruits and vegetables. I wanted to change from the usual vegetables I cook, and bam! Parsnip! Not afraid… I decided to make mashed parsnip!
I discovered this old vegetable with a delicate taste and a new healthy dish. The recipe I will introduce is rather lowfat. Then, it will be up to you to add grilled bacon and golden croutons… It was my choice, obviously… I always like it with the extra “je ne sais quoi” 😉
You can cook the recipe with your Thermomix (I have one and it’s super easy!) or with the usual saucepan (not much more complicated after all).
The whole family loved it! My kids can be a little grumpy about some vegetables. This dish was a real success!
To put it in a nutshell, it’s a healthy dish, that will be easily accomodated with meat or fish. It is the real good idea for a winter dinner or lunch.

Peel and cut the parsnips and potatoes. Cut the onion in pieces. If you have a Thermomix, go to bullet point 8. Otherwise, cook the onion with the olive oil for 2 minutes at medium heat in a large saucepan. Add the parsnips and potatoes, cook at medium heat for 5 minutes. Add the water and chicken stock cube. Let cook with cover for 25 minutes at medium heat. Mix with a hand blender. Add cream, salt, pepper and paprika. With your Thermomix, put the oil and onion in your bowl. Set 2 minutes, speed 2 at 80 degrees. Add the parsnip and potatoes, set 4 minutes, speed 2 at 70 degrees. Add water and the chicken stock cube. Set 20 minutes, speed 1.5 at 100 degrees. At the end of the cooking, mix 1 minute speed 10. Help with the spatula. Add cream, paprika, salt, pepper. Mix 20 seconds speed 4. Serve with croutons and grilled bacon.Mashed Parsnip
