Creamy Orzo with Chicken and Zucchini

It’s been a while since I wanted to make a recipe with orzo. Tell me: why did I wait so long???

I made this creamy orzo with chicken and zucchini and everybody around the table was asking for more!!

Creamy Orzo with Chicken and Zucchini

Ingredients

  • 20 g butter
  • 2 chicken fillets
  • 1 onion
  • 2 garlic cloves
  • 160 g orzo
  • 2 small zucchinis
  • 1 stock cube (vegetable or poultry)
  • 4-5 fresh thyme stalks
  • Salt
  • Pepper
  • 10 cl liquid cream
  • A few basil leaves

Instructions

Heat 1/2 liter water with the stock cube.

Melt the butter in a frying pan at medium/high heat.

Stir fry the chicken fillets until golden on each side and cooked at the center. Set aside.

Add the chopped onion in the frying pan (the one you used for the chicken without cleaning it). Cook for 2-3 minutes.

Add the grated garlic and zucchinis cut in small cubes. Cook for 5 minutes.

Set aside the pan content and pour the orzo in it.

Stir fry for 1 to 2 minutes.

Cover with broth (do not use 100% of it). Cook for 2 minutes.

Add the onion and zucchini cubes, add the thyme and cream. Salt and pepper to taste. Cook until your orzo is cooked the way you like it (you can add broth if necessary).

Add the chicken. Leave another 1 minute at low heat.

Serve with basil leaves.
