It’s one of my favorite go to recipe when I’m in a rush… my large pear and chocolate financier !

Large Pear and Chocolate Financier
Ingredients
- 3 large egg whites or 140 g
- 160 g icing sugar
- 100 g ground almonds
- 100 g salted butter or unsalted butter (in this case add 1 teaspoon of flower salt)
- 50 g flour
- 1/2 pear
- 30 g chocolate chips
Instructions
Preheat your oven at 170 degrees.
Melt the butter in a sauce pan at low heat. Set aside.
Pour the powders (sugar, almond, flour) in a bowl.
Start whisking and add, little by little, the egg whites.
When you get an homogeneous mixture, add the butter. Whisk.
Peel the pear and cut it in small pieces.
Add to the batter with the chocolate chips, mix and pour in your mold.
Bake 30 minutes (your financier should be golden).
Let cool down a bit before unmolding.
