The savory 5 “C” Waffles

After the 4 C soup, here is another recipe that puts the letter “C” on the front page…

Courgette (or zucchini 😉 ), curry, curcuma, coriandre and chive all together in the same mixture (how lucky am I to have the same first letter both in French and English??!!). Please applaud the savory 5 C waffles!

Make those super delish waffles with a green salad on the side and you’ll have a delicious dinner.

You can also enjoy this dish as a starter or as appetizers with a savory chantilly cream…

Spices are the key ingredients in this recipe. Let’s be honnest, zucchinis don’t bring much taste, it’s more the “veggie card” here… But curcuma,  curry and ground coriander will bring the perfect balance to this savory waffle. Tasty but not spicy.

You will need 5 to 10 minutes for the preparation and one hour and a half for it to rest (half hour for the zucchini to disgorge and one hour for the batter to rest in the fridge). It is so easy!

The quantities in the recipe will be enough for a dozen of waffles (size 10×12 cm), enough for a 4-5 person meal. I took my usual Gruau D’Or flour, it is the best for me to avoid lumps.

Ingredients

  • 1 zucchini
  • 300 g Gruau D'or flour
  • 11 g baking powder
  • 400 g milk
  • 2 eggs
  • 60 g butter
  • Salt
  • Pepper
  • 1/4 teaspoon curcuma
  • 1/2 teaspoon curry
  • 1/2 teaspoon ground coriandre
  • 6-8 stalks chive

Instructions

Wash the zucchini, cut both ends and grate it with your mandoline.

Place in a strainer and spread 1 teaspoon of salt.

Leave to disgorge for 30 minutes.

After 30 minutes, rinse with water. Squeeze to remove as much water as you can and place on absorbent paper to remove more water. Set aside.

Melt gently the butter in a sauce pan.

Pour the sifted flour and baking powder in a large bowl. Add half of the milk and whisk until you get an homogeneous mixture.

Add half of the remaining milk, whisk again. Add the rest of the milk, whisk. Make sure you don't have lumps at this point.

Add the eggs, one by one. Mix.

Add the melted butter and mix.

Season with spices, 2-3 pinches of salt, pepper. Add the chopped chive and the zucchini.

Set aside in the fridge for one hour.

Cook 3-4 minutes on greasy waffle plates.

    Merci pour la recette.
    J’ai mis de la farine complète mais gardé le reste.
    Ma fille a dévoré les gaufres et en à repris en dessert en étalant autant de pâte à tartiner que pouvait contenir la gaufre en question. Les épices n’ont visiblement pas dérangé.
    Ses 2 frères et son papa ont fait de même.

      J’ai un gaufrier Seb, qui fait aussi croque-monsieur. C’est un modèle de base acheté il y a de nombreuses années déjà … 😉
