Here’s my cherry and mascarpone cake, seasonal, yummy and so easy to make.

Cherry and Mascarpone Cake
Ingredients
- Batter
- 2 eggs
- 75 g sugar
- 125 g mascarpone
- 100 g flour
- 8 g baking powder
- 1 pinch flower salt
- 12 cherries
- Finish
- 50 g mascarpone
- 10 g liquid cream
- 1/2 tbsp vanilla sugar
- 3 cherries
Instructions
Batter
Preheat your oven at 170 C / 340 F degrees.
Beat the eggs and add 75 g sugar.
When the mixture gets foamy, add the mascarpone.
Add the flour and baking powder.
Finally add the flower salt, mix gently with a spatula.
Cut the 12 cherries in half and remove the stones.
Pour them in your batter then pour the whole thing in your buttered mold.
Bake 40 minutes.
Finish
Whisk the mascarpone, cream and vanilla sugar until firm.
Pipe on your cold cake.
Add the 3 cherries on top.
Serve!
