Roasted Cauliflower with Greek Yogurt and Pomegranate
Ingredients
- Cauliflower
- 1 cauliflower
- 4 tbsp olive oil
- 1 tbsp zaatar
- 1/2 tsp paprika
- 1 tsp ground cumin
- Salt
- Pepper
- Dressing
- 250 g Greek yogurt
- 1/2 tsp paprika
- 1 tbsp pistachios
- 1 tbsp pomegranate seeds
- A few mint leaves
- Olive oil
Instructions
Cauliflower
Preheat your oven to 200 C / 390 F degrees.
Remove the leaves from the cauliflower and rinse with water.
Dry it with absorbant paper and cut 2 cm slices.
Place the cauliflower slices on parchment paper, pour olive oil, spread zaatar, cumin, salt and pepper.
Cook for 30 minutes. (during cooking, brush the cauliflower slices with the oil from the parchment paper)
Dressing
Spread the Greek yogurt on your plates.
Add paprika and salt.
Place a slice of cauliflower on top, spread pistachios, pomegranate seeds and mint leaves.
Serve!
