Today, we’re back to dough. You know that I love working sourdough or any kind of dough!!
And we are going to make absolutely delicious apple babkas. Who’s in?

Apple Babkas
Ingredients
- Brioche
- 500g all purpose flour
- 1 tsp salt
- 70 g sugar
- 10 g dehydrated yeast
- 150 g lukewarm milk
- 50 g water
- 1 egg
- 1 tbsp maple syrup
- 80 butter at room temperature
- Garnish
- 20 g butter
- 40 g brown sugar
- 4 apples
- 1/2 lemon juice
- 1 tbsp maple syrup
- Brushing
- 1 egg yolk
- 1 tbsp cream
Instructions
Brioche
Pour the flour, salt and sugar in your food processor bowl.
Add the yeast, milk, water, egg and maple syrup. Knead at low speed.
Keep on kneading increasing the speed gently to medium for a few minutes.
Add the butter cut in cubes. Knead for 10 more minutes.
Leave to rise for 2 hours.
Press your hand on the dough and set aside in your fridge for 30 to 40 minutes.
Garnish
While the dough is rising, peel two apples. Remove the center and cook at low heat with a lid for 15 to 20 minutes.
At the end of cooking, mix with a hand mixer.
Set aside.
Peel the other 2 apples and cut them in small cubes.
Melt the butter in a pan, add the apple cubes.
Add sugar, maple syrup and lemon juice. Cook a few minutes until golden. Set aside.
Shaping
Spread the cold batter into a 35 x 40 cm rectangle . Spread the first apple preparation, leaving 1 cm on the boarders.
Add half of the apple cubes.
Fold the dough in 3 lengthwise. Press gently on the 2 small boarders.
Spread again in a 15 cm x 40 cm rectangle.
Place a cling film on top and set aside in your freezer for 20 minutes.
Cut 10 strips. Stretch them gently and twist them.
Shape a round babka, leaving the extremity under (to avoid the babka to open during cooking) and place on a baking sheet.
Start over with the other 9 stripes. Place on a two baking sheets.
Cover with a clean linen and let rise for 1 hour.
Preheat your oven to 180 C / 355 F degrees.
Whisk the egg yolk and cream, brush the babkas.
Spread the remaining apple cubes on top of your babkas.
Cook for 18 min until golden.
Let cool down on a rack and enjoy!
