Christmas is always the time to make cookies and , from where I come from (Alsace), it’s a huge tradition!!
And you’re not going to be disappointed with my pistachio and chocolate diamond cookies!

Pistachio and Chocolate Diamond Cookies
Ingredients
- 250 g flour
- 150 g butter at room temperature
- 125 g sugar
- 10 g vanilla sugar
- 100 g ground almond
- 30 g egg
- 50 g chocolate chips
- 50 g unsalted pistachios
- 50 g brown sugar
Instructions
Combine the butter and sugar n your food processor bowl.
Add the 30 g egg and mix until you get an homogeneous mixture.
Add the vanilla sugar, flour and ground almond.
Mix until you get an homogeneous mixture.
Spread as a rectangle, spread chocolate chips and chopped pistachios.
Roll and place in a cling film.
Set aside in your fridge for one hour at least.
Preheat your oven at 180 C / 355 F degrees.
Roll the pastry into brown sugar. Cut 5 mm slices.
Place the slices on a silicon mat or a baking paper.
Bake 10 minutes and cool down on a grid.
Keep your cookies in a metal box.
