Apple Christmas Cookies
Ingredients
- Jam
- 400 g apples
- 2 tbsp lemon juice
- 200 g sugar
- 100 g water
- 1/2 tsp vanilla extract
- Pastry
- 160 g butter
- 85 g sugar
- 245 g flour
- Finish
- 2 tbsp icing sugar
Instructions
Jam
Peel the apples, cut them in quarters, remove the center and cut them in cubes.
Place in a bowl and pour the lemon juice. Mix.
Pour the water and sugar in a sauce pan and cook with little bubbles for 5 minutes.
Add the apple cubes and cook at medium heat for 25 minutes.
Stir from time to time.
5 minutes before the end of cooking, add the vanilla.
At the end of cooking, mix until smooth.
Pastry
Preheat your oven at 180 C / 355 F degrees.
Combine butter and sugar until homogeneous.
Add the flour, combine.
Spread with a 3-4 mm thickness.
Cut the pastry with cutters, make a hole in the center of half of them and place on 2 baking mats.
Cook for 15 minutes.
Set aside on a cooling rack
Assembly
Garnish the biscuits without hole with apple jam. Spread icing sugar on the others.
Assemble the jam biscuits with sugar ones.
