Christmas decorated Cookies
Ingredients
- Cookies
- 300 g flour
- 75 g icing sugar
- 150 g ground almond
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 egg
- 1 egg yolk
- 225 g butter at room temperature
- Royal icing
- 1 egg white
- 200 g icing sugar
- 3-4 drops of water or lemon juice
Instructions
Cookies
Combine the butter and icing sugar.
Add the flour, salt, ground almond and vanilla extract . Combine until you get a sandy mixture.
Add the egg and the egg yolk.
Combine. Once the mixture is homogeneous, put the batter in a food cling film and set aside in your fridge for at least 2 hours.
After such time, preheat your oven at 160 C / 320 F degrees.
Spread the pastry, shape your cookies and place them on a silicon mat or a food paper.
Bake for 15 minutes and let cool down on a grid.
Royal icing
Whisk the egg white for 30 seconds.
Add the icing sugar and whisk 2 minutes. You should get a shiny white mixture with a rather firm texture.
Start decorating your cookies.
Add the water or lemon juice drops if you need to have a more liquid icing.
