Here is my crustless chorizo quiche.
Well, I should actually say my crustless chorizo quiches since I’ve chosen to make this recipe in individual servings. I find this recipe works really well in this format and I love serving it as a starter. However, you can also make one large quiche to share, for which you’ll need an 18 cm diameter pan. You can also make mini versions, perfect for an appetizer, using muffin pans.
As I said, for a quiche to share, use an 18 cm diameter pan. For baking, you’ll need to bake it for 25 to 30 minutes depending on your oven. The best way to check is to insert a knife into the center of the quiche and see if it comes out dry. If you have a 26 cm pan, just double the quantities. The cooking time will stay the same.
If you opt for an appetizer version, like using muffin pans, you should make about a dozen pieces. The baking time should be reduced to around 18 minutes.
I absolutely love this crustless chorizo quiche recipe. It’s always a treat, it’s quick to prepare, and it doesn’t require any advanced culinary skills or professional equipment! 😉 On lazy nights or when I’m short on time or inspiration, it’s the perfect dinner idea. I add a nice salad, and that’s it! Plus, it’s a very affordable recipe, which is pretty handy right now…

Crustless Chorizo Quiches
Ingredients
- 125 g Greek yogurt
- 100 g cream
- 40 g flour (or corn starch)
- 2 medium sized eggs
- 50 g grated cheese
- Salt
- Pepper
- Ground nutmeg
- 80 g chorizo cut in small cubes
- 25 thin slices of chorizo
Instructions
Preheat your oven at 200 C / 390 F degrees.
Combine the yogurt, cream and flour together.
Add the eggs. Mix well.
Add the grated cheese, season with salt, pepper and nutmeg.
Add the chorizo cubes and combine.
Place 5 chorizo slices as roses on each quiche.
Pour the batter in your molds.
Cook 20 minutes.
