Apple and Chocolate Mascarpone Cake

The apple season is back, and what better than an apple mascarpone cake! The famous one!! The one that’s often copied… 😉
Today, I present to you the latest creation in the family: the apple and chocolate mascarpone cake!

As I was saying, in the “mascarpone cake” section, there’s already plenty to enjoy, the family is quite large… In summary, here are all the recipes already available on the blog:

I wanted to propose a new one, kind of a combination of the first two (the two most viewed recipes on the blog!) with a few tweaks… And here it is, my apple and chocolate mascarpone cake was born…

For this recipe, I recommend using apples that soften well during baking, such as Golden, Canada, Jonagold, Boskoop, Gala, or Chanteclerc. Their softness when baking will balance the slightly “dry” texture brought by the chocolate. When I say “dry,” it’s all relative… This apple and chocolate mascarpone cake is anything but dry! 😉

I’m sure it will delight you for an afternoon snack (don’t hesitate to leave me a little comment if you make it) and will be absolutely delicious as a dessert. Serve it with a scoop of vanilla ice cream and some diced apples sautéed in a butter/sugar mixture until they caramelize… You’ll thank me later!!

The necessary utensils:
A peeler,

A cutting board,

A good paring knife,

A “cul-de-poule” bowl,

A good whisk

And a 20 cm diameter cake pan.

Now, all that’s left is for you to put on your apron and make my apple and chocolate mascarpone cake!

Apple and Chocolate Mascarpone Cake

Ingredients

  • 2 apples
  • 2 eggs
  • 75 g sugar
  • 125 g mascarpone
  • 100 g chocolate
  • 1 tbsp cocoa powder
  • 100 g flour
  • 8 g baking powder

Instructions

Peel and cut your apples in slices. Set aside.

Preheat your oven at 170 C / 340 F degrees.

Melt the 100 g of chocolate with a double boiler.

Combine the eggs and sugar.

When the mixture gets foamy, add the mascarpone.

Add the flour, the cocoa powder and baking powder.

Finally add the melted chocolate.

Set aside the apples needed to cover your cake, add the rest of them to the batter.

Pour in your buttered mold.

Place the remaining apple slices on top.

Bake 45 minutes.

Once baked, place on cooling rack.
