Today, I have an ultra-indulgent recipe for you, a little delight that you’ll be raving about, I’m sure!

Here are the accordion potatoes!

Now, you might be wondering, “What is she talking about?” Is Yvette Horner making a comeback?? 😉 No… but I promise you, this is even better!! These accordion potatoes will delight you, amaze your taste buds, and entertain your eyes!

This recipe is super simple, easy to prepare, and quick to make. The secret lies in how you slice the potatoes. Let me tell you everything… I found this recipe on social media (TikTok and Instagram), one of my greatest sources of inspiration.

At first, I was captivated by the visual appeal—because let’s be honest, we eat with our eyes first, right? That’s always the trigger for me. And these accordion potatoes did not disappoint when it came time to taste them!! Absolutely delicious! A true delight. You get crispiness, softness, and indulgence all in one. The perfect combo. Let’s face it—potatoes are life!! 😉

It’s an affordable recipe that will bring a festive touch to your plates and even a little “Chef” vibe… Here, the potato is presented in an elegant and refined way. The only tricky part is cutting it properly. You’ll need a good paring knife. I always use my FK2 paring knife from De Buyer—it’s my go-to for all my cooking prep.

I recommend using large potatoes; otherwise, your accordion potatoes will turn out very small. Now, you might be thinking, “That’s a lot of waste from the cut-offs…” And yes, that’s true. But don’t worry! At Casserole & Chocolat, we are always in anti-waste mode!

First, if you don’t plan to use the leftover potato pieces right away, place them in a container covered with water to prevent oxidation. Then, store them in the fridge. Be sure to use them within two days. You can mix them with other potatoes for a delicious homemade mash, combine them with other vegetables for a hearty soup, or simply cut them into cubes and sauté them in a pan with some oil. In short, nothing goes to waste…

Necessary utensils:

A cutting board,
Two chopsticks,
A knife,
A baking sheet,
And parchment paper.

Accordion Potatoes

Ingredients

  • 5 large potatoes
  • 2-3 tbsp olive oil
  • 1/4 tsp ground paprika
  • 1/4 tsp ground ginger
  • Kosher salt
  • Pepper
  • A few thyme stalks

Instructions

Preheat your oven at 180 C / 355 F degrees.

Peel the potatoes.

Cut them into rectangles, cutting first both extremities and sides.

Cut each rectangle in two, lenghtwise.

Place a rectangle on your cutting board. Place chopsticks on both length.

Cut horizontally on one side and diagonally on the other.

Place the rectangles on a baking tray lined with parchment paper.

Combine olive oil, paprika and ginger. Brush the potatoes.

Add salt and pepper.

Cook for 40 minutes.

Serve with thyme leaves.
