Today, I’m sharing a recipe that I consider one of the essential basics.

It’s olive oil shortcrust pastry.

This recipe is easy and quick to make, it’s delicious, and it gives a wonderfully crisp pastry when baked. Plus, this olive oil shortcrust pastry solves the butter issue for those who prefer to avoid it for health reasons or due to dairy intolerance.

This recipe is very simple, as I mentioned. You can also flavor it however you like. I used thyme leaves here, but you can also use rosemary (finely chopped to avoid large, chewy pieces), oregano, basil, coriander, or even mint. Let your creativity run wild!

Depending on its use, this olive oil shortcrust pastry can also be enhanced with spices or spice blends: curry, cumin (ground or toasted seeds), zaatar, paprika, and more. My tips for making olive oil shortcrust pastry: ideally, prepare it the day before or at least a few hours ahead. The cold helps pastry hold its shape! For better baking results, you can even roll out the dough, line your tart tin or pastry ring, and let it rest overnight or for a few hours in the fridge. This reduces the risk of the pastry shrinking or collapsing at the edges while baking.

The necessary tools:

Olive Oil Shortcrust Pastry

Ingredients

  • 250 g flour
  • 40 g olive oil
  • 1 tsp salt
  • 1 egg
  • Water
  • 1 stalk fresh thyme

Instructions

Combine the flour, salt and olive oil.

Add the egg and 2 or 3 tbsp of water.

Combine and add more water if necessary.

Add the thyme leaves.

Set aside in your fridge, wrapped in a cling film.
