Cod Fillet with Coconut Milk

I imagine that, like me, you sometimes don’t have much time to spend on meal prep. Today, I’m bringing you a recipe that will make your life easier while still packing in plenty of flavor and culinary pleasure!

Here is the cod in coconut milk!

This recipe is child’s play! It won’t take you more than 10 minutes to prepare this cod in coconut milk! Yes, really—just 10 minutes max!

After that, it’s super easy because it bakes in the oven. This kind of dish is perfect for enjoying a delicious meal without spending hours in the kitchen! I often make it when I have guests: I prepare everything before they arrive, and while we’re having appetizers, I pop it in the oven! Super simple and absolutely delicious.

What makes this cod in coconut milk truly delicious is the combination of flavors: shallots, carrots, a few spices, and coconut milk. And the best part? It’s a light dish! There’s very little added fat, and cod itself is naturally lean. Sounds tempting, doesn’t it? 😉

For the side dish, anything goes! White rice, mashed potatoes, steamed vegetables (green beans, peas, squash…), or even fresh pasta. It’s incredibly simple and full of flavor.

Of course, you can use a different type of fish based on your preferences or what your fishmonger has available: salmon, halibut, monkfish, pollock, sea bass, or hake. Depending on the thickness of your fish fillets, you may need to adjust the cooking time. For a thinner fillet, about 20 minutes in the oven should be enough.

For spices, you can also try curry, ground coriander, or paprika.

Cod Fillet with Coconut Milk

Ingredients

  • 500 g cod fillet
  • 2 carrots
  • 1 shallot
  • 10 g butter (or 1 tbsp vegetal oil)
  • 10 cl coconut milk
  • Salt
  • Pepper
  • Curcuma
  • Ground ginger

Instructions

Preheat your oven at 200 C / 390 F degrees.

Melt the butter in a small frying pan.

Add the minced shallot and the et carrots cut in thin slices.

Salt to taste and cook at medium heat for 5 minutes.

Place the cod fillet in a gratin dish. Add curcuma, ginger, salt and pepper to taste.

Cover with the shallot and carrots.

Pour the coconut milk, add more salt.

Cook for 25 minutes.
