Preparing savory salmon waffles is quite simple, requiring a basic waffle batter enriched with smoked salmon. The batter can be enhanced with fresh herbs like dill or parsley for extra flavor. Here, I chose dill because I love its fresh taste.

Some people also add cheese, such as Gruyère or Parmesan, for an extra creamy touch.

For the topping, I use smoked salmon to intensify the flavor already present in the batter. To accompany these savory smoked salmon waffles, I suggest a zesty lemon sauce and a salad with a vinaigrette you’re going to love! These two elements are quick and easy to prepare—don’t skip them! I used buttermilk for the waffle batter. It’s a fermented milk with a creamy, smooth, and slightly tangy taste. Buttermilk is simply milk with lactic ferments, similar to yogurt. However, you can use regular milk or yogurt for this recipe.

Smoked Salmon Waffles

Ingredients

  • Waffle batter
  • 250 g flour
  • 1 tsp baking powder
  • 3 eggs
  • 100 g butter at room temperature
  • 250 ml buttermilk
  • 200 g slices smoked salmon
  • 2 stalks of dill
  • Dip
  • 1 small lime
  • 150 g yoghurt
  • 1/4 tsp paprika
  • Salad
  • 100 g lettuce
  • 2 tbsp olive oil
  • 1/2 lemon
  • 1/2 tsp mustard
  • 1 tsp maple syrup
  • Salt to taste
  • Pepper to taste

Instructions

Waffle batter

Combine the flour, baking powder, eggs, butter, 2 pinches of salt and buttermilk until homogeneous.

Chop the dill. Cut one slice of smoked salmon in small cubes. Add both to the batter.

Set aside in your fridge for 30 minutes.

Heat your waffle maker, brush oil or butter on the plates and cook your waffles until golden.

Dip

Combine the yoghurt with the lime juice and zest.

Season with salt and paprika.

Salad

Wash and drain the lettuce.

Combine the oil, lemon juice, mustard and maple syrup. Add salt and pepper to taste. Pour on the lettuce.

Serve the waffles with the remaining smoked salmon, salad and lime dip.
