Instant Yogurt Pancakes
I’ve been wanting to try this recipe for ages—yes, ages! And now I can’t believe I waited this long. Absolute game changer!
You’ll be amazed by how simple, quick, and incredibly delicious these yogurt pancakes are. Soft, airy, and fluffy—the yogurt makes all the difference!
Let’s talk ingredients
I use 200g of yogurt in this recipe—after lots of testing, I found it to be the perfect amount. Yes, I know, most yogurt cups aren’t exactly 200g!
I highly recommend Greek yogurt for its smooth, slightly liquid texture. You can also use Bulgarian yogurt or a stirred yogurt. To make up the 200g:
Use part of a second yogurt and enjoy the rest as a snack
Or simply top it off with milk—that works too!
Another easy solution (perfect for food lovers!): Increase the ingredients by 1.5x, so you can use two full 150g Greek yogurt pots. More pancakes, more happiness!
How to store them?
If, by some miracle, you don’t eat all your pancakes right away (a rare occurrence in my house! ?), store them at room temperature, wrapped in plastic wrap. When ready to eat, reheat them in a hot pan for the best texture.

Why use a steel pan?
For pancakes and crêpes, a steel pan makes all the difference! It allows the batter to rise beautifully, making your pancakes thicker and fluffier. Since I started using one, I haven’t gone back!
Steel pans—like the classic De Buyer pans—are natural, durable, and free of coatings. No need to worry about Teflon or other questionable materials. Just season them properly, and they’ll last a lifetime!

Express Yogurt Pancakes
Ingredients
- 150 g Greek yogurt
- 50 g milk
- 2 eggs
- 150 g flour
- 1 pinch of salt
- 10 g vanilla sugar
- 1 tbsp caster sugar
- 1 tsp baking powder
Instructions
Combine the eggs, Greek yogurt and milk.
Add the rest of the ingredients, whisk until homogeneous.
Cook in a slightly greased pan.
